For the past couple of months, I’ve been good about getting back on a healthier diet after my holiday splurge. I’ve been trying to cook at home more, but to be honest, I’m not great in the kitchen and frequently get into cooking ruts. Pinterest is my go-to source for recipes, so I wrote a little Pinterest recipe roundup to share my new ideas with you.
I pulled a few recipes that were either healthy takes on classics or made substitutions to lighten them up. Here are the recipes I used and some thoughts on each.
Cauliflower Fried Rice
I’ve been wanting to try more cauliflower substitutions – namely rice and pizza crust. I decided to start with riced cauliflower and I followed this recipe from Iowa Girl Eats closely adding grilled chicken to make it a little more substantial. While it was tasty, even with chicken, it still wasn’t very hearty and I was hungry a few hours later.
Chicken and Mushroom Cream Pasta
Who doesn’t crave pasta with a nice cream sauce every once in a while? Not exactly diet friendly though, so, I found this lightened up chicken and mushroom cream sauce recipe from Cooking with Points and used chickpea pasta.
Chickpea pasta is a bit of a trick in that even though it has more protein and a bit fewer carbs than regular pasta, it has about the same calories and more fat. It also broke into small pieces when I stirred in the sauce. So, while it tasted very similar to regular pasta, I wouldn’t make the substitution again unless I did another vegan cleanse and wanted to use the chickpea pasta as a source of protein.
Bolognese Over Spaghetti Squash
I’m a big fan of any recipe that makes a large amount of food I can freeze in individual portions and reheat later. I made traditional Bolognese sauce from Skinny Taste, but instead of serving it over pasta, I created a spaghetti squash boat of sorts. This one was my favorite of the three recipes I tried and I was very full after eating only about 300 calories worth!
In the future, I’ll grab a spaghetti squash on the way home and just reheat some frozen Bolognese in the microwave. Super easy weeknight meal!
